How do you cook over an open fire?  If you have some really good recipes for cooking over the fire, please share.

Well, I ain't a lady but try this...

Here is a simple one for the cookbook, even the most cooking challenged among us can handle this...

Bacon Jalapeno Poppers

6 med. jalapenos
6 pieces of bacon
cream cheese

Split jalapeno's in half & remove all the seeds & veins. Fill with cream cheese & press lightly back together. Wrap with bacon & put on a cookie sheet or something similar in an oven pre-heated to 400 degrees for 15 - 20 minutes, until the bacon is done. Use a toothpick to hold the bacon in place if necessary. Even better on the barby or over an open fire (use tin foil...).

take your favorite piece of beef(tenderloin wrapped in bacon) put it in a fired hot cast iron skillet. pour your favorite beer to the top of the beef. let the beer cook down to nothing. flip the beef over. pour the beer to the top of the beef. when the beer is gone it's done. doesn't over cook or under cook the beef. comes out tender and delicious.. we cook this all the time. i know it seems a waste of beer but well worth it. i recommend a darker beer for better flavor. you don't even notice a beer taste. happy eating. chrrs

Brown choice of meat in a hot dutch oven with grease or oil of choice. Add chopped veggies to taste, season with whatever is growing nearby. Add left over coffee to almost cover meat. Put lid on dutch oven and simmer for half a day or so. Works inside too.

After morning breakfast, build the fire back up a good bit for coals. In a Cast iron dutch oven, brown some meat in left over bacon grease. Add lots of onions, some taters, carrots, exct. Little salt/pepper Lea&perrins if you got it. Little water, not too much. You'll have to adjust this for how many onions you use. They make lots of water.

Now dig a hole by the fire and scrape in some coals. Place the dutch oven on top. Fill in around with a few coals and dirt up to top. Cover with a layer of coals. Finally cover all with a good layer of dirt. You have to put the lid on the dutch oven!?!

Go run your traps, or fishin lines. Don't worry about time, this will be ready in about 4 hrs, but will still be ready in 8 or 10. If you saved some biskets from breakfast you got a meal fit for a KING.  chrrs

This is a southern recipe, and probably won't work if the ground is frisz!  [hmm] Have to wait a while, or take a trip.

If you got a cabbage, and room in the pot get it on. YUM!!!

Why limit yourself to 'over the fire'? .  Build a rock oven beside the fire pit..and use top of oven to keep things hot..like the coffee pot.


you can bake bread like this easily...sorry for the mess around the pit...hadn't cleaned up yet after fixing the stew in the big pot..hot stew, fresh bread, hot coffee..not a bad way to rough it..

Year earlier, same spot--everyone bailed so went alone..still ate well.  Any time you show at my camp, yes bring spoon and cup...
