Country cured/salt cured bacon

I've got a slab of "country cured" or salt cured bacon which will keep at room temperature for 3 weeks.  I'm not for sure but IIRC, you need to soak what you're going to eat the night before in water to take out some of the salt.  Am I correct in that thought?

Also, besides the obvious frying for breakfast, anyone have any recipes for salt cured bacon?

 thmbsup  soak it overnight then brown it a little in a stock pot then add October beans and shicken stock and let her cook all day.

Okay, here's what I learned.  To remove the salt of country cured bacon you may want to soak for two nights, because this stuff is really salty.  Not too bad overnight but it does add quite a bit to whatever you are cooking it with.  At any rate, made some split pea and bacon soup from Turkeyfoot Trading Company and it's kind of like tents; what the instructions says "sleeps three" really means it sleep only two.  This mix is supposed to feed four but the three of us got what we wanted and one more would have left us all hungry.  Anyway, tasty and portable, just add water and boil.
I cut the bacon into two inch cubes and it's for flavor only because boiled bacon is just inedible.  The rest of the side of bacon will be used in other recipes or just fried for breakfast but it's good stuff.  Just don't boil it...........and expect to eat it.  srndr

I like it without soaking.  Just slice and fry.  I like and, in the south need, lots of salt.

I like to fry up 2 or 3 slices and break them up into all beans.

You can add bacon to anything that you would add salt to, just leave the salt out.

Yes, I love salt cured bacon.

Bacon is a food group unto itself! Not much for ham after the Army fed it to us every day for a month, but I do love bacon!

Got a salt cured ham, about 15#, when we lived in Tenn. Brought it home and put it on the counter and went about my business. Never got to cook it, wife came home and thought it was moldy and threw it away!
