Know we have some darn good cooks on the site, but how's about fixing cold stuff that doesn't require heating up the house or grill, darn it to hot for that unless you wants to be out there at  midnight.  Figure am talking about a major portion of members from what the weather shows, being hot.  Not camp food per say  just some cool summer foods. fruits, veggies. sandwiches, etc.  Think cabin fever settin in and you's supposed to be baking and cooking meat  and hot rib stickin food when stuck inside in snow storm!!  Been a few days since seen anything that even resembles snow, rain, ice, any thing wet, not even a flock of birds flying over, to hot to fly!! :mini-devil-28492:  Just a thought

Here's one to start,  my grandma's cold salmon salad.   can of red salmon, (pink works but not as pretty) chopped celery, hard boiled eggs chopped, sweet pickle relish, walnuts, mayo to moisten, can serve on lettuce or just as a cold salad.

A local southwest favorite...
(It doesn't get much easier than this!)

Shrimp (or crab or fish) Ceviche

Portions depend on people but in general:

1 bag of frozen shrimp= 1 lb. (or fresh, if you can get it)- cooked & peeled is easiest, but any will do...
1 med. to large onion
1 large tomato or two med.
Jalapeno to taste
3 or 4 juicy limes
1 half cup of cilantro, or more if you really like cilantro...
Corn Chips or Corn tortillas (fry the tortillas & let dry hard)
Salt & Pepper

Chop everything but the limes up as fine as possible, mix in a bowl
Add the juice of the limes & mix well Put in a Tupperware container & stick in fridge at least half an hour to "cook". Traditionally, raw shrimp are used, the acid in the lime juice "cooks" them. Mix occasionally. Tupperware works well because you just shake it a couple times & put it back. The longer it cooks, the more flavor...
Serve on the chips, one scoop at a time, with Tapatio hot sauce.

Don' forget the Cerveza! (mexican style lager)

Keeps in the fridge for days, I usually make a good size batch & eat it 3 or 4 days running.

Okay rev when is the chip party and how do I get there. Mine is fruit salad
1/2 cup chopped wall nuts.
1 cup grapes.
1 granny smith apple chopped into small cubes.
2 bananas sliced.
1/4 cup cherries sliced.
1/2 cup strawberries sliced.
1 cup small marshmallows.
1 container coolwhip
1/4 cup sugar
1/2 teaspoon cinnamon. Chill and enjoy
