Rhubarb Recipes

Per your request Bulldog Lady.   Rhubarb custard pie. This was my Great Grandmothers recipe.

3 C. rhubarb cut 1/2" thick
1 1/2 C. sugar
2 eggs
2 TBS. all-purpose flour
2 TBS. butter, melted
1/8 tsp. salt

Beat eggs.  Add remaining ingredients. Let sit while making crust for a 9" pie. Bake at 400 degrees for 50 to 60 min.

For a 10" pie, increase ingredients as follows. 4-1/2 C. rhubarb, 1-3/4 C. sugar, 3 eggs, 3 TBS. flour, 3 TBS. butter.

Thank you and wife, made my mouth water so got out the old extension homemakers book, rhubarb recipes from cobbler, bread, cakes, salads on and on.  One of members of our club says she can get it by the ? lb box and make and freeze etc.  Sure looked like a weed growing outside my grandma's back door but forgot how good it can taste, thanks again and if you are willing to share any others on site or pm me I surely appreciate it.

O.k. This is my Mom's Rhubarb Custard Cobbler.

3 C rhubarb, cut in 1/2" pieces
1 1/2 C. sugar
2 eggs, beaten
2 tbs. flour
1/8 tsp.salt
2 tbs. melted butter

TOPPING

1/2 C. sugar
1/2 C. milk
1 egg, beaten
1 tsp. baking powder
1 C. flour

Preheat oven to 350.
Mix together rhubarb 1.5 c. sugar, 2 eggs, 2tbs. flour, salt, and 2tbs butter. Let stand while making topping.

Mix together topping ingredients. Pour rhubarb mixture into greased 8"X8" pan. Pour topping over rhubarb. Bake at 350 for 30 to 35 minutes or until rhubarb is tender. Serve warm or cold. Vanilla ice cream goes great with this. Or shake up a pint carton of heavy whipping creme and pour over each serving.

One more. Rhubarb Sauce.

4 c. rhubarb cut into 1/2" pieces
1/2 tbs. butter
2 tbs water
sugar and cinnamon to taste

For each quart (4 cups) rhubarb add butter and water. Use 2tbs water regardless of amount of rhubarb. Cover and cook over low heat until rhubarb is tender. stir occasionally until sauce is creamy. Add sugar and cinnamon to taste. goes great over vanilla ice creme or as a substitute for apple sauce.

Rhubarb is meant to be eaten fresh in the garden with a salt shaker. That's the best way. :applause:

Seriously, where can I get seeds or seedlings to plant?  I love rhubarb but have not seen anyplace to get the plants in Oklahoma!

Ours shot up about 8 inches in the last two days, better get some before the grandkids come over.

I'll see if I can find anything. The only patch I know is on an abandoned farm up north.

They have the roots/tubers or what ever hid among the flower bulbs that a certain someone rushes me past in the local nurseries or Home Depot/ etc,  think they are like asparagas you have to wait till 2nd year to cut them,   From what remember  Grandmas looked like big leafed celery kinda by the back door.  for now  just pick some up at the store but sure not as good as fresh as  home picked,  with all these recipes think will check with the friend and see where she got the bulk boxes.  Guess some of it baked up or not ,sure if freeze, be worth a try, will check out the books on freezin. some stuff ya can and some ya gets mush.

If you do find some and want the flavor 'as cut' to remain at it's best for a longer harvest period, you should cut off the seed pods as the they come up. Least that is what I was told by my gram. It does seem to work.

You'll often find me wandering around the yard munching on a stalk. If you want less "bite" peel the skin off. Never tried it with salt.

I know you all will probably laugh inside but, is Rhubarb a fruit or a vegitable? I grew up with my mom growing it but she didn't eat it. I'm curious as to which it is. Don't laugh to hard you all..

Good question. If I had to guess I'd say it's a vegetable. You eat the stem of the plant.

Good question. If I had to guess I'd say it's a vegetable. You eat the stem of the plant.

Rhubarb is usually considered to be a vegetable; however, in the United States, a New York court decided in 1947 that since it was used in the United States as a fruit it was to be counted as a fruit for the purposes of regulations and duties. A side effect was a reduction in taxes paid.
