Hunters Stew

I make this quite often at or voos for the club members on Sunday eve, we have or rondy over labor day weekend 4 day event, now keep in mind I kae this in an 18" DEEP Dutch Oven, you can scale it down to fit your  DO

Ingredients;

1 lb bacon
2to 3 lbs venison
2 to 3lbs elk
2to 3 lbs buffalo
1 full stalk celery
3lbs carrots
4 baseball size onions
a healthy T of minced garlic
1T freshly ground pepper corns
3lbs taters (any kind) I like to use Yukon Golds
1 large can V8  (HI-C size, 32 oz?)
1 beer
2C burgundy, add last 1/2 hour of cooking
5 fresh bay leaves
2 C flour

Cut all game meat into stew size chunks, cut bacon in half, put the flour in a gallon size zip lock and season with your favorite seasoning,(beware you will have salt from the bacon and v8 in the stew you may want to wait until it's cooked awhile and taste to add salt),

Cut produce into hearty chunks and set aside ( I usually do this at home and take to the voos in zip locks ready to go)

In the pot, render bacon and fry till crisp, remove and set aside, add meat chunks to flour and coat, brown in oven in batches, if you start to run out of grease add some cooking oil and bring up to temp, after all meat is browned dump all into the put, crush the crisp bacon and add, add ALL remaining ingredients (except taters and burgundy) and cook till tender, add taters& burgundy,and cook till done, to thicken stew I use instant potato flakes add a cup to stew and stir, wait a few minutes to let them bloom and absorb liquid, if not thick enough add some more a little at a time until you get the desired thickness ( CAREFUL!!!!!! you can go from "it needs more" to drywall mud thickness real quick!)

During cooking if you need to add more liquid, go for it, I usually just dump another beer in as needed!

Serve with some nice DO biscuits and you'll have the crew lickn the pot!

Ifn I can gater up some meat from the boys, Ol LM didn't get to hunt last year and the freezer pretty bare!!!!!!!!!!!!!!!!!!!!!!!!

 Well I got plenty of venison, and if they call me to help butcher some buff next week, I can probably cover that too. Will have to see. It sounds good.
