Rev  thanks alot, messed up printer trying to  print off recipe but think the Red badger can fix it! He gets Eggs Benedict one day a year for fathers day, only day can affort Canadian!!  Use Tender Quick on my jerky and summer sausage so that have on hand.  frequently get whole loins and do the butterfly chops and roasts and save $ in mean time.  Can't wait to try it.  Another one of the  benefits of TMLC you learn to cook.  chrrs  Thanks again  Frau Jaeger  :mini-devil-28492:

Neat link...have use their sugar cure of bear..it was great..guess I need to try other meat and other cures..  just something to look forward to.

I used to spend a lot of summers in Canada while I was growing up and my dad loved Canadian bacon.  Myself, I can't tell the difference between it and storebought ham here in Ohio...... [hmm]

Ohio?!!  You ever tasted hickory smoked, or virginia cured ham?  a big difference from Canadian and real ham :mini-devil-28492:  Checked out Sam's , can get small 2 pack loins for 2.99 lb or whole big loin for 1.99 / lb  just have to do the trim work on fat and silver skin.  Gonna try it for sure   Thanks Rev

Finally got around to trying it.  Gave up after 2 hrs of fighting wind for smoker so fiished off in oven but turned out great  Think will get a bigger piece next time,  used the 2 lbs to start with but not any more work for big hunk than small.  Thanks Rev great info

Worked out great.... Now going to have to get another meat slicer as I sold our last one and I do like my canadian bacon very thinly sliced without adding any finger meat to it!  pnic
