you talked about your bear diet, sorta like comparing deer from the bottom farm ground, soy beans, corn etc vs acorns and bark!!  anyways more recipes sound good with any meat: said bear.    marinated bear steaks,  4 lbs steaks  1" thick, 10 fresh mushrooms, 2 T.butter.  trim fat and tenderize with mallet,   Mainade=2-4 c favorite berry, dandelion or sweet wine, , 1 c olive oil, 2 med onions diced, 3 carrots diced, 1/2 can of frozen oj.  bay leaf, 1/2 t. thyme, 1 t paprika,  mix marinade, add meat, refrigerate for 48 hrs. remove from marinade,grill or broil baste with marinade,  saute mushroom in butter and pour over hot meat. 

Any ways guys these books have recipes for everything, boar, antelope,bear, caribou, moose, wild sheep,javelin, elk, mt lion, and that is just in the big game section.    You bag food and bet we can find a recipe- course then you have to envite everyone to come sample your fares!! :mini-devil-28492:

Nephew had his made into salami...it was sure good....mine, sugar cure on hams and then use just like pig ham..beans supreme!!

I had a friend in school that used to "Corn" it, like corned beef, yummmmmmmmmmmmm!

You can't beat a bear roast or bear burgers. IMHO it's better than venison.  ;D

Had a bunch made into sausage.  Might have to try that cure sounds good for rondy meal. Brian is having the skin turned into a rug, gonna mount it on the back of his capote, thats what I did with one I have. It keeps you real warm in any weather, plus it looks cool ;D

I just follow the wifes recipe for meatloaf. It calls for 1/3 sausage, (bear sausage) 1/3 ground beef and 1/3 grd veal. We usually forget the veal and go with 2/3 grd. beef. You may want to use a bit more garlic and alway add ground bay leaf. Use plain bread crumbs and not oatmeal. Eggs, salt, grd. black pepper, red pepper flakes, onion powder and milk for added moisture pretty much rounds this out. We make our own sausage but the spicing is the same as pork sausage and flavor is balanced with ground pork. We have to test cook a small bit to get it right before we mix up large batches. We grind the whole bear up except for a bit we save out for stew.

 Well had a very horrible discovery in my garage where I keep my game freezers. The one holding the bear was MAGICALLY unplugged from the wall and I just noticed. Why I say magically is no one is fessing up to it but I got a real good idea,a certain in-law family member who likes to pretend shes a country girl decided after the "wonderful MEAT loaf" I baked , made her sick TWO DAYS later when I broke the news to her that it was bear. She proceeded to rant and rave how she knew it tasted funny and she has not felt the same since dinner that night. But she ate meat loaf sandwiches the day after the dinner. So all the rest of my Bear, Deer and what elk I had left is toast (susp). Sorry to rant on, but now I feel better. Hmmmmm I do have a backhoe [hmm] hntr

     You want to dig the hole very deep, as deep as the backhoe can dig,  Put the inlaw in. ;D  Cover with enough dirt to leave a 6' hole, then burry spoiled meat. :-&   This way, if something digs up dirt,  pnic  only the spoiled meat is found. noway

I appreciate the recipes,

I was discussing with a surveying buddy last week the value of even hunting our bear.  They are heavy to haul and on the land more than a mile of bad terrain from the nearest road.  If it was not for the destruction of our behives and feed rooms, we'd probably not bother.  We've never found a satisfactory recipe.  We do treat the meat like pork!  old, tough, pork.  One of the local mountaineer buddies says his mom finally found several ways to make it worth eating but I haven't received any recipes yet.  So thanks for these.
