Easy Jerky ( tobacco substitute)

Bulldog lady

5 lbs lean ground venison, beef, no pork
     OR  5 lbs of sliced (1/4 " thick top round  sirloin etc
2 TBS Tenderquick
6 Tsp salt
2 1/2 tsp coarse black pepper
2 tsp cayenne (more if like hot)
3 tsp accent
2 Tbs liquid smoke
2 + Tbs water

Mix well-( if using strips trim off all connecting tissue )can seal in vacumn bags as seems to help seasoning permeate meat esp if sliced or just in plastic bag and squish ever so often- 24 hrs + esp if strips
Roll meat 1/4" thick on wax paper and put on dehydrator shelves (- haven't made it this way for long time but think how did it or used the plastic sheets that came with dryer) carefully remove paper  works better if cold  or if strips just spread on trays with spaces between
Cook on meat setting 145 deg till done  6-8 hrs depends on dryer and thickness. Turn part way thru,blot off any fat droplets   Cut into strips when done Freezes well or refrigerate,  Never lasted long enough to do either.
