What would a hunter have worn in the 1820 era during winter to help keep his feet at least warm if not dry. This is a person in charge of providing meat for several people

I can not speculate on what a hunter in the west would have worn as I am in my infancy to studying the mountain men, However an Eastern Longhunter would have worn wool socks with a deer hide moccasin over them and a larger sized fur moccasin over them with a fur leg wrap.

I should have added the location
lower Mississippi river valley along the Natchez Trace

Da Backwoodsman

I just tried a couple of search engines to see if I could find anything, and most of the references about the 1820's natchez trace speak of its use as a "highway" for kaintuckians or Louisianan french...

That being siad: I think it is fair to surmise that if you want the footwear type of an american hunter for that period then it would be in line with the eastern longhunter as I described above, if your persona is a hunter  that say lived in a settlement then I would say any high heeled lace up boot is going to be accurate and if its a hunter of french decsent then you want to find a buckle for that lace up boot...

just my thoughts chaffa hasa hope this was helpful.

One thing to keep in mind is most of the settlers in that era were originally either French or Easterners fleeing endentured servitude so its probable that almost anystyle of colonial era would be exceptable the only thing that changed was the location the people were still themselves, and the footwear I described is probably a useful adaptation of what the native americans introduced to the settlers, this particular style was indicative of almost all of the eastern tribes and Longhunters the only variation being in the cut of the moccasin

Jerry records indicate a large number of lace up boots went west ...
mocs were made by the dozens to protect feet once the boots wore out ...
Leg wraps n oversized moc/boots were made to protect feet n lower legs.
Snow shoes were also worn and most lacing was sinew or rawhide ...
