I'm not a very big onion fan, but heres a recipe that is wonderful, got it out of Tidings from the Eighteenth Century a wonderful book that has everything in it from makin soap, to patterns, to how to make quil pens,very informative book.

onion pie

3 pounds onions sliced
cook until brown in butter
Beat 3 eggs and pint of heavy cream together and add the onions,
pour into pie crust lined pan and add a crust to the top
Bake 350 degrees for 1 hour.
add bacon or sausage to it if preferred.

Oh man are it good !! Similar as a "Cowboy Quiche" Good for breakfast ,lunch and dinner !!!

taught the missus that one a few years back, thats some good eating
