I help with the Maple Sugaring at Darke County parks Shawnee Prairie and I will see if we have enough Birch Trees to do Birch Beer! chrrs  We were talking about starting to do Hickory Syrup as well....

I would suspect (lack of knowledge + or -) that maple beer tastes somewhere along the spectrum of mead?  So what does "birch beer" taste like?  AND DON'T TELL ME IT TASTES LIKE BIRCH!
