Title: Irish Soda Bread

This works well in a dutch oven, or in a regular oven on a stone bread or pizza round. Pre-heat the oven to 375 if cooking indoors. I grease the cold dutch oven well with butter, same with a cooking stone.

In a large bowl mix 1 2/3 cup flour, 1 teaspoon caraway seed, 1 teaspoon baking powder, 3/4 teaspoon baking soda, 3/4 teaspoon salt, 2.5 tablespoons sugar and 3/4 cup gold raisins.

In a smaller bowl mix 3/4 cup cultured buttermilk, 1 large egg and 1 half stick (4 tablespoons butter). Melt the butter and mix it in well.

Add the liquid into the dry ingredients and stir up till the liquid is absorbed, the batter will be very thick. Flour your hands and shape the batter into a ball and place in dutch oven or on a cooking stone. Take your sharpest knife and cut a cross in the batter.

Cook until a knife blade or stick stuck into the bread comes out clean, maybe 30 minutes in a regular oven, keep more coals on top of the dutch oven than on the bottom. Let the bread cool for 5-10 minutes on a rack and serve warm, the bread will slice but it is better to just break off a chunk and enjoy it with your coffee.
