I am wondering if anyone has any recipe's for Beets and the roots?? Trying to find ways to be able to eat them and the roots if possible.
If we are talking Red Beets, best is Buttered beets, followed by Harvard beets. Take fresh whole Beets and put in SS pot, cover with water and cook them until they are just tender when checked with a fork. Rinse in in cold water and rub off the outer skin. Then slice Beets, place in pot and add butter. For Harvard beets, place sliced, or diced beets in small amount of water, not enough to cover the beets. Heat, then add equal parts of sugar and vinegar. Add black pepper, to taste. Heat to boiling then take 1/4 cup of COLD water and add cornstarch, mix with fork til well blended and no lumps etc. Slowly add to beets and removed from heat to prevent scorching of bottom of pan. Serve. add less vinegar for what the Bostonians call Yale Beets.

Good fresh red beets can just be microwaved until soft..peal and eat..

For Beet Greens, cook like Turnip Greens.
Fry three pieces of Bacon until crisp, remove from skillet. add greens to hot bacon drippings. stir to coat and "simmer" for about 3 minutes. crumble bacon add to pan and sprinkle with a good Malt Vinegar
cook beets. put in jar. boil eggs . put in same :applause:jar. add 3tblspoons sugar. fill up with vinegar. let set in fridge for a day. take out of fridge. eat eggs. throw beets away. Hope this helps.......LOL
