Title: Sausage recipes.

 Alright this section has been kinda quiet for awhile, who's got there own sausage recipes to share. I'll start with mine.
This recipe will work with all seven types of venison very well.
                                                                   Southern Venison Sausage.
7LBs. lean venison
3LBs pork fat
1/3 cup salt. (or salty seasoning)
1/2 cup brown sugar
2 t. pepper
2 t. red pepper.

Cut venison and fat into 1/2 inch cubes. In a bowl mix remaining ingredients. Push through a meat grinder. Then mix with hands, thoroughly. Shape meat into patties and fry. You can use any red gamemeat in place of venison. However, possum and coon meat do not work as well. Enjoy. Now I'm hungry ;D
